This was a very fortunate accident.
Ethan and I had spent too much time outside and before I knew it, I was about 45 late to start dinner. The hanger started to set in, Blake was out of town, and I was in a panic to throw something together. I saw ground chicken, snap peas and plum sauce- A HA! Yes, I said plum sauce because I meant to grab the plum sauce. Thank goodness I didn't because this dish was SO GOOD. I'm sure it would be equally great with plum sauce or a variety of veggies. I served with brown rice on the side.
What you'll need:
1 lb. lean ground chicken (or turkey). Do not go too lean or it will be dry.
1/4 cup Hoisin sauce
2 tsp. sesame oil
2 lbs sugar snap peas
2 cloves of garlic (or 1 tsp ground)
1 tsp. onion powder
Put it together:
Steam the sugar snap peas until they are bright green. Put into cold water to stop cooking.
In a separate pan, saute the garlic with 1 tsp sesame oil until fragrant.
Add 2nd tsp. of sesame oil and ground chicken- cook until brown.
Add in onion powder (and garlic powder if you did't have fresh).
Stir in Hoisin sauce- coating all the chicken.
Reduce heat and let immer for a minute.
Add sugar snap peas and cook another 1-2 minutes until heated through.
Serve over rice or grain of choice.
