It's starting to feel like fall.
The mornings are crisp, the leaves are changing, and Trader Joe's has everything pumpkin back on the shelves.
I'm ready for the change this year and all it is to bring- the soups, sweaters, and yes... the pumpkin everything.
My little man is forced to miss his pancake day at school each week and so I decided, with the kickoff of fall, I would make a special treat which, he gobbled up happily.
These were super easy to whip up- throw everything in the blender and pour directly on the griddle.
What you need:
1 cup pumpkin puree
1 cup rolled oats (or quick cooking)
1 scoop unflavored protein powder (or vanilla for sweetness):
note: I used vega with greens and it was absolutely unnoticeable.
1 cup egg whites
1/2 cup milk (any type)
1 tsp pumpkin pie spice (cinnamon is fine)
1 tsp vanilla
1 tsp baking powder
What you'll do:
Blend and enjoy!
The consistency is a bit like pumpkin pie. If you like a less mushy pancake you can reduce the egg white and pumpkin by 1/4 cup each.
