When I think of meatloaf, I think of the picture that used to be in my mom's Better Crocker recipe book- a giant chunk of meet slathered with ketchup. While that is all fine and dandy, it's not really my speed. I like veggies and I like variety.
My husband on the other hand is a true meat and potatoes kinda guy. And, he loves himself a good meatloaf. So, after a few years of experimenting with different forms of loafed meat, I have combined a few of my favorites to make my own version. And, my friends, this is not yo' mama's meatloaf.
My version has a lot of veggies, tons of flavor, and lots of protein.
LG's Mighty Veggie Meatloaf
1/2 cup oats (quick cooking)
1 lb ground turkey, chicken, or lean beef (or whatever ground meat you choose)
1/2 cup finely diced onion
1/2 cup each of 3 different shredded/finely chopped veggies- I ues carrots, zucchini, mushrooms and/or bell pepper
4 egg whites or 2 whole eggs
2 tsp worchestershire sauce
1/4 ketchup
1/2 tsp salt
1 tsp garlic powder
Mix well to distribute veggies evenly throughout meat. Bake at 350 degrees for about an hour (or internal temperature reaches 160).
