I love a good granola.
While most of my recipes are inspired by my want to make healthier versions of my favorite foods (for Ethan's sake), this one was a happy lil' accident.
I was throwing a baby shower and forgot the granola for the yogurt parfaits. I didn't remember until 10pm the night before and I WAS NOT going to the store the next morning. I was also short on ingredients for the granola I wanted to make so, I improvised... and it came together quite splendidly.
TIP: Stir every few minutes or else it may burn. You can cook at a lower temperature for longer time but you will have to play with your own oven.
What you'll need:
2 cups oats- I used Trader Joe's Rolled Oats (not quick cooking)
1.5-2 cups cooked quinoa
1/2 cup slivered almonds
1/2 cup sunflower seeds
1/2 cup dried cranberries
2 tbsp. fat (oil of choice or butter)
1/4-1/2 cup maple syrup (I used 1/4 cup but sweeten to taste)
Couple tbsp. of chia (or another seed)
Pinch of salt
Put it together:
Combine wet ingredients until mixed well
Combine dry ingredients
Pour wet over dry and mix well
Spread on tray sprayed with cooking spray
Bake at 350F until golden- about 25-45 minutes
